Laurence bakes her cakes herself, in her kitchen by the lake. She will soon share her favourite recipes here, season by season.
Settled by the lake, Laurence lives at the heart of a very lively baking tradition. Trøndelag is one of the Norwegian regions richest in lefser recipes: soft flatbreads spread with butter, sugar and cinnamon. Sveler, small thick pancakes, are served with coffee, and bløtkake, a sponge cake layered with cream, is the cake for birthdays and for the national day on 17 May.
Bilberries and lingonberries grow in the forests, and cloudberries (multer) in the bogs, ripe in July and August: Norwegians make them into jams and creams, or use them to decorate their cakes. The right to roam lets everyone pick them.
At Christmas, Norwegian tradition calls for baking “sju slag”, seven kinds of cookies: pepperkaker, smultringer, krumkaker (thin wafers rolled into cones, originally an Easter treat), goro, berlinerkranser…
